Ingredients

  • 1 1/2 pounds chicken breasts boneless and skinless, cut into 1-inch cubes
  • 1/2 pound fresh mushrooms sliced
  • 1 large onion chopped
  • 1 medium sweet red pepper cut into 1/2-inch pieces
  • 1 medium green pepper cut into 1/2-inch pieces
  • 1 (2.25-ounce) can sliced ripe olives drained
  • 1 (24-ounce) jar marinara sauce
  • 1 (15-ounce) jar Alfredo sauce
  • 2 (9-ounce) packages refrigerated cheese tortellini
  • parmesan optional, to taste, grated
  • fresh basil optional, to taste, torn into pieces

Directions

  • In a 5-quart slow cooker, add the chicken, the mushrooms, the onion, the red pepper, the green pepper, the olives, and the marinara sauce.
  • Cover the slow cooker and cook on low heat until the chicken is tender, about 6-8 hours.
  • Stir the Alfredo sauce and the tortellini into the chicken mixture.
