Ingredients

  • 1 1/2-2 pounds ground beef
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 1 (10.5-ounce) can cream of cheddar cheese soup
  • 3 cups frozen cubed potatoes
  • 1 cup cheddar cheese shredded, divided
  • salt to taste
  • pepper to taste
  • chives optional, to taste, for garnish

Directions

  • Preheat the oven to 350 degrees F.
  • Grease a 9x13-inch casserole dish.
  • In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes. Drain the excess grease from the skillet.
  • Add the beef to a large mixing bowl.
  • Add the cream of mushroom soup, the cream of cheddar soup, the potatoes, 1/2 cup of the shredded cheese, the salt, and the pepper to the bowl and mix until combined.
  • Pour the ground beef mixture into the prepared casserole dish.
  • Sprinkle the remaining shredded cheese on top.
  • Cover the casserole dish with foil and bake for 30 minutes.
  • Remove the foil and bake until the cheese is golden-brown, about 30 minutes.
  • Garnish with the chives and serve hot.
