The hand-clapping layers of cheesy, saucy ground beef tortillas will be a foot-stomping favorite of your dinner arena. Be the matador of your next meal thanks to Casser- Olé and let the flamenco dancing begin. There's no question that this dish will be the clear winner anytime you're craving some Mexican-inspired flavor! Ole'!

Ingredients

1 pound 90% lean ground beef
1 large onion chopped
2 cups salsa
1 (15-ounce) can black beans rinsed and drained
1/4 cup reduced-fat Italian salad dressing
2 tablespoons reduced-sodium taco seasoning
1/4 teaspoon ground cumin
6 (8-inch) flour tortillas
3/4 cup reduced-fat sour cream
1 cup reduced-fat Mexican cheese blend shredded
1 cup lettuce shredded
1 medium tomato chopped
1/4 cup fresh cilantro minced

Directions

Preheat the oven to 400 degrees F.
Coat a 7x11-inch baking dish with nonstick spray.
In a large skillet over medium-high heat, add the ground beef and the onion and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.
Add the salsa, the black beans, the Italian salad dressing, the taco seasoning, and the cumin to the beef mixture and mix well.
Add 3 of the tortillas to the prepared baking dish.
Evenly top the tortillas with 1/2 of the beef mixture, 1/2 of the sour cream, and 1/2 of the cheese.
Repeat the layers, starting with the tortillas and ending with the cheese.
Cover the casserole and bake for 25 minutes.
Uncover the casserole and bake for an additional 5-10 minutes.
Let the casserole stand for 5 minutes.
Top the casserole with the lettuce, the tomatoes, and the cilantro.
Plate, serve, and enjoy!
