Ingredients

  • 1 pound 90% lean ground beef
  • 1 large onion chopped
  • 2 cups salsa
  • 1 (15-ounce) can black beans rinsed and drained
  • 1/4 cup reduced-fat Italian salad dressing
  • 2 tablespoons reduced-sodium taco seasoning
  • 1/4 teaspoon ground cumin
  • 6 (8-inch) flour tortillas
  • 3/4 cup reduced-fat sour cream
  • 1 cup reduced-fat Mexican cheese blend shredded
  • 1 cup lettuce shredded
  • 1 medium tomato chopped
  • 1/4 cup fresh cilantro minced

Directions

  • Preheat the oven to 400 degrees F.
  • Coat a 7x11-inch baking dish with nonstick spray.
  • In a large skillet over medium-high heat, add the ground beef and the onion and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.
  • Add the salsa, the black beans, the Italian salad dressing, the taco seasoning, and the cumin to the beef mixture and mix well.
  • Add 3 of the tortillas to the prepared baking dish.
  • Evenly top the tortillas with 1/2 of the beef mixture, 1/2 of the sour cream, and 1/2 of the cheese.
  • Repeat the layers, starting with the tortillas and ending with the cheese.
  • Cover the casserole and bake for 25 minutes.
  • Uncover the casserole and bake for an additional 5-10 minutes.
  • Let the casserole stand for 5 minutes.
  • Top the casserole with the lettuce, the tomatoes, and the cilantro.
  • Plate, serve, and enjoy!
