Ingredients

8 ounces mini penne can substitute classic penne or elbow macaroni
1 cup frozen mixed vegetables
1 tablespoon butter
1 tablespoon extra-virgin olive oil
1/2 cup onion chopped
1/2 cup celery diced
1 teaspoon dried parsley
freshly ground black pepper to taste
2 cups chicken cooked and diced
1 (10.5-ounce) can condensed cream of chicken soup or cream of chicken soup with herbs
3/4 cup whole or low-fat milk
1/2 cup sour cream
kosher salt to taste
1 cup parmesan cheese shredded

Directions

Preheat the oven to 350 degrees F.
Grease a 2-quart casserole.
In a large pot of salted, boiling water, cook the penne to al dente, according to the package directions.
Drain the penne, then rinse with cold water and drain again.
Cook the mixed vegetables according to the package directions.
Drain the mixed vegetables.
In a medium saucepan over medium heat, melt the butter with the olive oil.
Add the onion and the celery to the butter-oil mixture and cook, stirring frequently, until they are tender.
Stir the parsley, the pepper, the chicken, the cream of chicken soup, the milk, the sour cream, and the cooked vegetables into the onion mixture.
Taste the chicken mixture and season with the salt as needed.
Add the penne to the chicken-veggie mixture and stir to combine.
Spoon the penne mixture into the prepared casserole dish.
Evenly sprinkle the penne mixture with the parmesan cheese.
Bake the penne mixture until it is hot and bubbly, about 30-40 minutes.
Serve.
