This is THE Easy Delicious Casserole... what more could you ask for?! It's so simple because it requires very, very little preparation, and most of the time it takes to make is just baking time, so check that off as easy, for sure. And it's totally tasty thanks to perfect penne, juicy chicken, yummy veggies, and creamy sauce. Yum, yum, yum. You might have just found your favorite new dish! We know we have. Nothing can compare to this Easy Delicious Casserole!
Ingredients
- 8 ounces mini penne, can substitute classic penne or elbow macaroni
- 1 cup frozen mixed vegetables
- 1 tablespoon butter
- 1 tablespoon extra-virgin olive oil
- 1/2 cup onion, chopped
- 1/2 cup celery, diced
- 1 teaspoon dried parsley
- freshly ground black pepper, to taste
- 2 cups chicken, cooked and diced
- 1 (10.5-ounce) can condensed cream of chicken soup or cream of chicken soup with herbs
- 3/4 cup whole or low-fat milk
- 1/2 cup sour cream
- kosher salt, to taste
- 1 cup parmesan cheese, shredded
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 2-quart casserole.
Step 3 -In a large pot of salted, boiling water, cook the penne to al dente, according to the package directions.
Step 4 -Drain the penne, then rinse with cold water and drain again.
Step 5 -Cook the mixed vegetables according to the package directions.
Step 6 -Drain the mixed vegetables.
Step 7 -In a medium saucepan over medium heat, melt the butter with the olive oil.
Step 8 -Add the onion and the celery to the butter-oil mixture and cook, stirring frequently, until they are tender.
Step 9 -Stir the parsley, the pepper, the chicken, the cream of chicken soup, the milk, the sour cream, and the cooked vegetables into the onion mixture.
Step 10 -Taste the chicken mixture and season with the salt as needed.
Step 11 -Add the penne to the chicken-veggie mixture and stir to combine.
Step 12 -Spoon the penne mixture into the prepared casserole dish.
Step 13 -Evenly sprinkle the penne mixture with the parmesan cheese.
Step 14 -Bake the penne mixture until it is hot and bubbly, about 30-40 minutes.
Step 15 -Serve.
