Ingredients

  • 1/4 cup rice vinegar
  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons honey
  • 2 teaspoons canola oil
  • 4 chicken thighs boneless and skinless
  • 3 cloves garlic minced
  • 1/2 teaspoon ground ginger
  • toasted sesame seeds optional, to taste, for serving

Directions

  • In a small bowl, whisk the vinegar, the soy sauce, and the honey together until they are blended.
  • In a large nonstick skillet over medium-high heat, add the oil and brown the chicken thighs on both sides.
  • Add the garlic and the ginger to the skillet and cook, while stirring, for 1 minute.
  • Stir the vinegar mixture into the chicken mixture and bring it to a boil.
  • Reduce the heat and simmer the chicken mixture, covered, until the meat reaches an internal temperature of 170 degrees F, about 8-10 minutes.
  • Uncover the skillet and cook until the sauce has slightly thickened, about 1-2 minutes.
  • Sprinkle the chicken with the sesame seeds.
  • Serve.
