Ingredients

2 cups strawberries hulled and diced
1 teaspoon lemon juice
2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup granulated sugar
1/2 teaspoon salt
8 tablespoons butter unsalted
2 medium bananas
2/3 cup milk
1 tablespoon orange zest
1 teaspoon vanilla extract

Directions

Preheat the oven to 375 degrees F.
Line a baking sheet with parchment paper.
Place the strawberries in a large bowl and drizzle with the lemon juice.
In a large bowl, add the flour, the baking powder, the sugar, and the salt, and combine.
Use a fork to cut the butter into the flour mixture until it resembles small peas.
In another bowl, use a fork to mash the bananas.
Add the milk, the orange zest, and the vanilla extract to the bananas and mix to combine.
Add the banana mixture and the strawberry mixture to the flour mixture and mix well using a spatula, ensuring it is not overmixed.
Use a cookie scoop to scoop out the cookie dough and place it on the prepared baking sheet, leaving a couple inches in between each cookie
Bake the cookies, in batches, until they are lightly golden brown, about 7-10 minutes.
