Ingredients

  • 2 cups strawberries hulled and diced
  • 1 teaspoon lemon juice
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 8 tablespoons butter unsalted
  • 2 medium bananas
  • 2/3 cup milk
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract

Directions

  • Preheat the oven to 375 degrees F.
  • Line a baking sheet with parchment paper.
  • Place the strawberries in a large bowl and drizzle with the lemon juice.
  • In a large bowl, add the flour, the baking powder, the sugar, and the salt, and combine.
  • Use a fork to cut the butter into the flour mixture until it resembles small peas.
  • In another bowl, use a fork to mash the bananas.
  • Add the milk, the orange zest, and the vanilla extract to the bananas and mix to combine.
  • Add the banana mixture and the strawberry mixture to the flour mixture and mix well using a spatula, ensuring it is not overmixed.
  • Use a cookie scoop to scoop out the cookie dough and place it on the prepared baking sheet, leaving a couple inches in between each cookie
  • Bake the cookies, in batches, until they are lightly golden brown, about 7-10 minutes.
  • Cool, then serve and enjoy!
