Ingredients

1 1/4 pounds 90% lean ground beef
2 teaspoons garlic minced
1/2 teaspoon fresh ginger minced
1 tablespoon sesame oil
1/4 cup brown sugar
1/4 cup low-sodium soy sauce
1 teaspoon cornstarch
1 tablespoon cold water
1/4 cup green onions sliced
1 tablespoon sesame seeds
3 cups rice cooked
3 cups vegetables such as broccoli asparagus, carrots, mushrooms and/or peppers, steamed or sautéed

Directions

In a large skillet over medium-high heat, cook and stir the beef until it is browned and crumbly, about 5-7 minutes.
Add the garlic and the ginger to the beef and cook, about 1 minute.
While the beef is cooking, in a small bowl, whisk the sesame oil, the brown sugar, and the soy sauce together.
Add the sesame oil mixture to the beef mixture, bring to a simmer, and cook, about 3-4 minutes.
While the beef mixture is cooking, in a small bowl, add the cornstarch and the cold water and mix until the cornstarch dissolves.
Add the cornstarch mixture to the beef mixture and cook until the sauce thickens, about 1 minute.
Add the green onions and the sesame seeds to the beef mixture and stir to combine.
Divide the cooked rice and the vegetables into four bowls, spoon the beef mixture over the top, and serve.
