Ingredients

  • 4-6 slices of applewood-smoked bacon cut into 1-inch slices
  • 1/3 cup onion diced
  • 1/2 teaspoon garlic minced
  • 1 1/2 pounds fresh green beans washed and with the ends cut off
  • 3 quarts water plus more as needed
  • salt to taste
  • pepper to taste
  • unsalted butter optional

Directions

  • In a large dutch oven over medium heat, fry the bacon until almost cooked through on both sides, about 2 minutes per side.
  • Add the onion and garlic and cook until the garlic is fragrant and the bacon is crispy, for about 1-2 minutes.
  • Add the green beans and the water.
  • Bring the water to a boil and cook until the green beans are fork-tender and cooked through, for about 15-30 minutes.
  • Drain the water.
  • Place the green beans, onions, and bacon in a serving bowl.
  • Season with salt, pepper, and butter.
  • Serve hot.
