Ingredients
- 8 ounces angel hair pasta
- 2 cups chicken cooked and chopped
- 2 (10.5-ounce) cans cream of chicken soup
- 1 cup salsa
- 1 cup sour cream
- 2 cups Mexican cheese blend shredded, divided
- 1 tablespoon taco seasoning
- dried parsley optional, to taste, for topping
Directions
- Preheat the oven to 350 degrees F.
- Spray a 9x13-inch baking dish with nonstick cooking spray.
- Cook the angel hair pasta to al dente, according to the package directions.
- Drain the pasta well.
- Place the drained angel hair, the chicken, the cream of chicken soup, the salsa, the sour cream, 1 cup of the Mexican cheese, and the taco seasoning in the pot used to cook the pasta and stir well to combine.
- Pour the pasta mixture into the prepared baking dish.
- Top with the remaining cheese and the parsley.
- Cover and bake until the casserole is hot and bubbly, about 25 minutes.
- Serve.
