Sometimes, when you need the best of the best, you just gotta say "Buffalo me." Buffalo Me Bake will deliver what you're looking for! Creamy, spicy, buttery, indulgent Buffalo chicken dip is slathered over tender roasted vegetables and bouncy macaroni for a truly savory and hearty dish unlike any other. When the Buffalo Me Bake makes its way to the table, everyone will want a taste, and that's not a Bluff-alo!
Ingredients
- For the Buffalo chicken dip (or can substitute store-bought):
- 1/2 cup chicken, cooked and shredded
- 1 tablespoon hot sauce
- 1/4 teaspoon garlic, minced
- 1/2 tablespoon apple cider vinegar
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup light sour cream
- 1/3 cup plain Greek yogurt
- 1/3 cup cheddar cheese, shredded, divided
- 1/4 teaspoon dried parsley, plus more, to taste
- For the bake:
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 1 cup grape tomatoes, halved
- 1 tablespoon olive oil
- 6 ounces elbow pasta
- 2 cups fresh baby spinach
- 1/2 cup cheddar cheese, optional, shredded
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -In a large bowl, add the cooked chicken, the hot sauce, the garlic, the vinegar, the onion powder, the salt, the pepper, the sour cream, the yogurt, 2 1/2 tablespoons of the cheddar cheese, and 1/4 teaspoon of the dried parsley.
Step 3 -Transfer the chicken mixture to a 9x13-inch baking dish.
Step 4 -Top the chicken mixture with 2 1/2 tablespoons of the cheddar cheese and the extra parsley.
Step 5 -Bake until the cheese is melted, about 20 minutes.
Step 6 -Increase the oven temperature to 400 degrees F.
Step 7 -In a separate 9x13-inch baking dish, add the celery, the carrots, and the tomatoes.
Step 8 -Drizzle the vegetable mixture with the olive oil and toss lightly to ensure everything is coated.
Step 9 -Roast the vegetables until they soften, about 30 minutes.
Step 10 -Cook the pasta to al dente, according to the package directions.
Step 11 -Drain the pasta and add it to the baking dish.
Step 12 -Add 2 cups of the prepared Buffalo chicken dip and the spinach to the baking dish, stirring to combine. Reserve the remaining Buffalo chicken dip for another use.
Step 13 -Top the bake with the remaining 1/2 cup of the cheese.
Step 14 -Bake until the casserole is heated through and the cheese is melted, about 10 minutes.
Step 15 -Serve.
