Ingredients
- 2 1/2 pounds ground beef
- 1/2 cup onion minced
- 1 egg
- 1 cup breadcrumbs
- 2 tablespoons salt
- 1/2 teaspoon ginger
- 1/2 cup milk
- 1 1/2 tablespoons shortening
- 2 1/2 tablespoons cornstarch
- 3/4 cup brown sugar packed
- 1/2 cup vinegar
- 2 tablespoons soy sauce
- 2 (13.5-ounce) cans pineapple tidbits drained and syrup reserved
- 1/2 cup green pepper chopped
Directions
- Preheat the oven to low heat.
- Combine the beef, the minced onion, the egg, the breadcrumbs, the salt, the ginger, and the milk in a large bowl gently, but thoroughly.
- Shape the mixture into balls.
- Melt the shortening in a large skillet.
- Cook the meatballs in the shortening until browned and cooked through at 145 degrees F internally, about 5 minutes per side.
- Place the meatballs on a baking sheet and place them in the oven to keep warm.
- Drain the fat from the skillet.
- In a bowl, mix the cornstarch, the brown sugar, the vinegar, the soy sauce, and the reserved pineapple syrup until the mixture is smooth.
- Pour the sauce mixture into the skillet and cook it over medium heat, stirring frequently, until the mixture becomes thick and is boiling.
- Continue to boil and stir the sauce for 1 minute.
- Add the meatballs, the pineapple bits, and the green pepper to the sauce and heat through completely.
- Serve.
