Ingredients

  • 3/4 cup unsalted butter
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 4 ounces cream cheese, softened
  • 4 ounces full-fat Greek yogurt or crème fraîche
  • 4 medium bananas, mashed
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon cinnamon, optional
  • 1/2 cup millet, optional, uncooked

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease two 9x5-inch loaf pans.

Step 3 -Melt the butter in a large bowl.

Step 4 -Add the granulated sugar and the brown sugar to the melted butter and whisk well to combine.

Step 5 -Add the eggs, one at a time, mixing after each addition.

Step 6 -Add the vanilla and the salt, mixing to combine.

Step 7 -Add the cream cheese and the Greek yogurt and stir until fully incorporated.

Step 8 -Add the mashed bananas and mix well.

Step 9 -Add the flour, the baking soda, and the cinnamon and stir until the batter just comes together.

Step 10 -Add the millet.

Step 11 -Divide the batter evenly between the two pans.

Step 12 -Bake until a tester inserted into the center of each loaf comes out clean, about 1 hour.

Step 13 -Allow the loaves to cool.
