Ingredients

For the chicken:

  • 1 pound chicken breasts boneless and skinless, cut into 1-inch chunks
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs

For the sauce:

  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup honey
  • 4 cloves garlic minced
  • 2 tablespoons hoisin sauce
  • 1 tablespoon ginger freshly grated
  • 1 tablespoon sriracha
  • rice optional, to taste, cooked, for serving
  • 2 green onions thinly sliced, for garnish
  • 2 teaspoons sesame seeds for garnish

Directions

  • Preheat the oven to 400 degrees F.
  • Lightly oil a 9x13 baking dish.
  • Season the chicken pieces with the salt and the pepper.
  • Place the eggs and the panko into two separate shallow bowls.
  • Working in batches, dip the chicken pieces into the eggs and then dredge them in the panko and press to coat.
  • Place the chicken pieces in the prepared baking dish and bake until they reach an internal temperature of 165 degrees F and are golden-brown and crisp, about 15-20 minutes.
  • While the chicken pieces bake, in a medium saucepan over medium-high heat, combine the soy sauce, the honey, the garlic, the hoisin sauce, the ginger, and the sriracha until it thickens slightly, about 1-2 minutes.
  • Stir the cooked chicken into the sauce and gently toss to combine.
  • Serve the chicken with the sauce over the rice and garnish with the green onions and the sesame seeds.
