Ingredients
- 2 pounds chicken breasts
- 1 tablespoon sage
- salt to taste
- pepper to taste
- 32 ounces chicken broth plus more to taste
- 1 (10.5-ounce) can cream of chicken soup
- 1 (32-ounce) package frozen cubed hashbrowns
- 8 ounces cheddar cheese shredded
- 1 cup French fried onions divided
- 1 cup frozen veggies
- 1/2 cup butter melted
- 8 ounces sour cream
Directions
- In a large pot, add the chicken breasts, the sage, the salt, and the pepper.
- Pour the chicken broth over the chicken breasts so they are fully covered.
- Bring the chicken breasts to a simmer, cover, and cook until they reach an internal temperature of 165 degrees F, about 30-35 minutes.
- Reserve 1 cup of the chicken broth from the pot.
- Preheat the oven to 400 degrees F.
- Grease a 9x13-inch baking dish.
- Transfer the chicken breasts from the pot and shred them with two forks.
- In a large bowl, mix the cream of chicken soup, the chicken broth reserved from cooking the chicken, the hashbrowns, the cheese, 1/2 cup of the French fried onions, the veggies, the melted butter, and the sour cream together.
- Pour the chicken mixture into the prepared baking dish and top with the remaining French fried onions.
- Cover the dish with foil and bake until the hashbrowns are cooked through, about 30-45 minutes.
- Uncover and bake the casserole until bubbly, about 5 minutes.
- Serve.
