Ingredients

For the cake:

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup butter room temperature
  • 1 teaspoon vanilla
  • 1 (8 ounce) container sour cream

For the streusel:

  • 1 cup walnuts optional, chopped
  • 2/3 cup brown sugar
  • 1/2 cup sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla

Directions

  • Preheat the oven to 325 degrees F.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, add the eggs, sugar, butter, and vanilla.
  • Beat the wet ingredient mixture until it begins to come together.
  • Add the dry ingredients. Mix until just moist.
  • Add the sour cream. Mix until smooth but be careful not to overmix.
  • In a bowl, mix together the walnuts, the brown sugar, sugar, cinnamon, and vanilla.
  • Spray a 10-inch tube pan with baking spray.
  • Spoon 1/2 the batter into the bottom of the pan, spreading it until even.
  • Sprinkle it with about 1/2 of the streusel.
  • Add another layer of batter and another layer of streusel to the tube pan.
  • Bake for 40-50 minutes.
  • Cool completely before serving.
