Ingredients
- 4 ounces halloumi cheese
- 3 tablespoons unsalted butter
- 3 heaping cups fresh sweet corn from 3-4 cobs
- kosher salt to taste
- black pepper to taste
- 2 tablespoons chives thinly sliced
- 1 tablespoon cilantro minced
- 1 lime optional, zested, for topping
Directions
- Preheat a large skillet over medium-high heat.
- Add the halloumi to the hot skillet and sear it on each side until browned, about 2-3 minutes.
- Transfer the halloumi to a clean plate and cut it into bite-sized pieces.
- Reduce stovetop heat to medium.
- Add the butter to the hot skillet and cook, while swirling gently, until it is melted and lightly browned, about 4-5 minutes.
- Add the corn to the melted butter and cook, while stirring, until it is tender and cooked through, about 1-2 minutes.
- Season the corn with the salt and the black pepper.
- Transfer the skillet from the heat.
- Add the chives and the cilantro to the corn and stir to combine.
- Layer the halloumi pieces over top of the corn mixture.
- Serve topped with the lime zest.
