Ingredients

  • 4 ounces halloumi cheese
  • 3 tablespoons unsalted butter
  • 3 heaping cups fresh sweet corn from 3-4 cobs
  • kosher salt to taste
  • black pepper to taste
  • 2 tablespoons chives thinly sliced
  • 1 tablespoon cilantro minced
  • 1 lime optional, zested, for topping

Directions

  • Preheat a large skillet over medium-high heat.
  • Add the halloumi to the hot skillet and sear it on each side until browned, about 2-3 minutes.
  • Transfer the halloumi to a clean plate and cut it into bite-sized pieces.
  • Reduce stovetop heat to medium.
  • Add the butter to the hot skillet and cook, while swirling gently, until it is melted and lightly browned, about 4-5 minutes.
  • Add the corn to the melted butter and cook, while stirring, until it is tender and cooked through, about 1-2 minutes.
  • Season the corn with the salt and the black pepper.
  • Transfer the skillet from the heat.
  • Add the chives and the cilantro to the corn and stir to combine.
  • Layer the halloumi pieces over top of the corn mixture.
  • Serve topped with the lime zest.
