Ingredients

  • 1 cup wild rice blend
  • 2 tablespoons olive oil
  • 1 yellow onion diced
  • 8 cremini mushrooms diced
  • 3 cloves garlic minced
  • 1/2 teaspoon dried thyme
  • salt to taste
  • pepper to taste
  • 3/4 cup turkey or chicken broth
  • 1 tablespoon arrowroot powder mixed with 1 tablespoon water
  • 3 cups turkey cooked, cubed or shredded
  • 10 ounces frozen peas
  • 1/2 cup sharp cheddar optional

Directions

  • Preheat oven to 350 degrees F.
  • Cook the wild rice blend according to the package directions.
  • Heat the oil in a large sauté pan over medium-high heat.
  • Add the onions and the mushrooms to the oil and sauté until the onions are translucent, about 4-5 minutes.
  • Add the minced garlic, the thyme, the salt, and the pepper to the onion mixture and stir for 1 minute.
  • Pour the chicken broth into the onion mixture and stir to combine.
  • Add the arrowroot powder slurry to the pan onion mixture and stir until the sauce has thickened, about 1-2 minutes.
  • In a 9x13-inch casserole dish, add the cooked wild rice, the cooked turkey, the frozen peas, the cheese, and the onion mixture and stir to combine.
  • Bake the casserole, covered, until it's warmed through, about 15 minutes.
  • Serve.
