Ingredients
- 1 cup wild rice blend
- 2 tablespoons olive oil
- 1 yellow onion diced
- 8 cremini mushrooms diced
- 3 cloves garlic minced
- 1/2 teaspoon dried thyme
- salt to taste
- pepper to taste
- 3/4 cup turkey or chicken broth
- 1 tablespoon arrowroot powder mixed with 1 tablespoon water
- 3 cups turkey cooked, cubed or shredded
- 10 ounces frozen peas
- 1/2 cup sharp cheddar optional
Directions
- Preheat oven to 350 degrees F.
- Cook the wild rice blend according to the package directions.
- Heat the oil in a large sauté pan over medium-high heat.
- Add the onions and the mushrooms to the oil and sauté until the onions are translucent, about 4-5 minutes.
- Add the minced garlic, the thyme, the salt, and the pepper to the onion mixture and stir for 1 minute.
- Pour the chicken broth into the onion mixture and stir to combine.
- Add the arrowroot powder slurry to the pan onion mixture and stir until the sauce has thickened, about 1-2 minutes.
- In a 9x13-inch casserole dish, add the cooked wild rice, the cooked turkey, the frozen peas, the cheese, and the onion mixture and stir to combine.
- Bake the casserole, covered, until it's warmed through, about 15 minutes.
- Serve.
