Ingredients

  • 2 large eggs lightly beaten
  • 1/4 cup milk
  • 1/4 cup ketchup plus more for serving
  • 1/2 cup cornflake cereal crushed
  • 4 tablespoons dried onion minced
  • 1 teaspoon prepared mustard
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds lean ground beef 90% lean

Directions

  • Preheat the oven to 350 degrees F.
  • Line 12 muffin cups with foil.
  • In a large bowl, combine the eggs, the milk, the ketchup, the cornflakes, the dried onion, the prepared mustard, the salt, and the pepper.
  • Crumble the beef over the mixture and mix well.
  • Press the meat mixture into each of the prepared muffin tin cups.
  • Bake until the internal temperature of the meatloaves reaches 160 degrees F, about 25 minutes.
  • Drain the excess grease and drizzle the meatloaves with more of the ketchup.
  • Serve.
