Ingredients
For the stir-fry:
- 3 (1-ounce) packages instant ramen
- 8 cups water boiling
- 1 clove garlic minced
- 1 teaspoon cornstarch
- 2 tablespoons sesame oil
- 1 lime juiced
- 1/4 cup plus 1 tablespoon soy sauce
- 2 cups broccoli florets
- 1 tablespoon olive oil divided
- 3/4- pound flank steak thinly sliced
- 1/2 medium yellow onion thinly sliced
Optional garnishes:
- 2 tablespoons green onion sliced
- 2 tablespoons fresh cilantro chopped
- 1 1/2 teaspoons sesame seeds toasted
Directions
- In a large bowl, add the ramen noodles. Discard the seasoning packets or save for another use.
- Pour the boiling water over the ramen noodles and let sit, stirring occasionally, for 6 minutes.
- Drain the ramen noodles and rinse with cold water.
- In a small bowl, combine the garlic, the cornstarch, the sesame oil, the lime juice, and the soy sauce and stir to combine.
- In a large, microwave-safe bowl, add the broccoli and microwave until soft, about 1 minute 30 seconds.
- In a large, nonstick pan over high heat, add 1 teaspoon of the olive oil.
- Add the steak slices and 2 tablespoons of the garlic mixture to the oil and cook until the meat reaches an internal temperature of at least 145 degrees F, about 2 minutes.
- Transfer the steak slices from the pan.
- Heat 1 teaspoon of the oil in the same pan.
- Add the onion to the oil and cook, stirring frequently, until browned, about 4 minutes.
- Add the broccoli to the onion and cook until lightly browned, about 2 minutes.
- Transfer the veggie mixture from the pan.
- Add the remaining oil to the same pan.
- Add the ramen noodles and the remaining garlic mixture to the oil and cook, while stirring constantly, until the noodles soak up the sauce.
- Return the veggies and the steak slices to the pan and stir to combine.
- Serve the stir-fry garnished with the green onions, the cilantro, and the sesame seeds.
