Ingredients
- 2 bacon strips diced
- 1 pound ground beef
- 1 3/4 cups fresh mushrooms sliced
- 1 large onion finely chopped
- 1 large carrot finely chopped
- 1 celery rib finely chopped
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried tarragon
- 1/4 teaspoon pepper
- 3 cups mashed potatoes hot
- 3/4 cup cheddar cheese shredded and divided
- paprika to taste
Directions
- Preheat the oven to 350 degrees F.
- Grease a 2-quart baking dish.
- In a large skillet, cook the bacon until crisp.
- Transfer the cooked bacon to a paper-towel-lined plate and reserve 1 teaspoon of the bacon drippings in the skillet.
- Cook the beef in the bacon drippings until no longer pink, about 5-7 minutes. Drain the excess grease.
- In a bowl, toss the mushrooms, the onion, the carrot, and the celery in the flour.
- Add the veggie mixture, the broth, the Worcestershire sauce, the tarragon, and the pepper to the meat mixture and bring to a boil.
- Reduce the heat and simmer, uncovered, until the veggies are tender, about 15-20 minutes.
- Stir the cooked bacon into the meat mixture and transfer it to the prepared baking dish.
- In a bowl, combine the mashed potatoes and 1/2 cup of the cheese.
- Spread the potato mixture over the beef mixture.
- Sprinkle the potato mixture with the paprika and the remaining cheese.
- Bake, uncovered, until it is heated through, about 20-25 minutes.
- Broil the casserole 4 inches from the heat source until bubbly, about 5 minutes.
- Serve.
