Layers of delicious Tex-Mex flavor, with juicy savory beef, hearty beans, and summer corn all accented by vibrant salsa and zesty taco seasoning make for a fantastic game day dish! Of course, it's topped with crunchy corn chips and melty cheese, because that's what really makes this dish a winner! Let the Ultimate Gameday Bake get you into the winning spirit!
Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 1 (4-ounce) can green chiles, chopped
- 1 (4-ounce) can sliced black olives, drained
- 1 (16-ounce) can chili
- 1 (16-ounce) can chili beans
- 1 (15-ounce) can corn, drained
- 1 cup salsa
- 1 tablespoon taco seasoning
- 1 (10.5-ounce) bag corn chips
- 2 cups cheese, of your choice, shredded
- jalapeños, optional, to taste, sliced, for topping
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a large skillet over medium-high heat, add the ground beef and the onion and cook, while crumbling the beef, until the meat is no longer pink, about 5-7 minutes.
Step 3 -Drain the grease from the skillet.
Step 4 -Stir in the chiles and their juices, the olives, the chili, the chili beans and their liquid, the corn, the salsa, and the taco seasoning and simmer, stirring often, until the flavors meld together, about 20 minutes.
Step 5 -Crush the corn chips.
Step 6 -Spread 1/2 of the crushed corn chips in the bottom of a 9x13-inch baking dish.
Step 7 -Add the chili mixture to the baking dish.
Step 8 -Top the chili mixture with the remaining corn chips.
Step 9 -Bake the casserole for 25 minutes.
Step 10 -Add the cheese and bake until the cheese is melted, about 10 minutes.
Step 11 -Serve hot, topped with the sliced jalapeños.
